Actually there is a few simulators. Sail simulator. Virtual skipper 5. Although these are not rc boat simulators, they use full size boats.

use epoxy or vinylester resin, poly isn't the best resin for repairing as qldviking said, epoxy will work the best.

maybe you could also try putting the canards fully down or making longer ones as that might be the reason the boat is stalling.

i think you will still find the boat was controlled by people.. also most of the technology they were going to use, they didn't end up using on the boat, for instance the wind detection wasn't even...
