I've been running my STs (75 and 90) without the baffles for 5+ yrs now with no ill effects. Just fly it and enjoy it without that rattling noise.

Sounds like you have it balanced "on-the-money". Most low winged planes should be balanced inverted to provide stability performing the CG operation, for both lateral and longitude.

No problem putting both the rudder and nose wheel on the same side of that servo. I suggest putting the rudder on the outermost servo horn for max deflection and place the nose wheel on...
