First time I built a plywood-frame hull, I thought for sure I could stand on it without breaking it - it seemed that strong!

I wouldn't necessarily take that as absolute. Try to build a little lighter, if you can. It's easy to add ballast, but can be tough to lighten a ship...

Basically, yes. There will be some gaps to fill, & some sanding to get it to the final shape.

You need to cut "windows" that simulate a ribbed frame.

You've got to cut windows....
