I would keep it single. A nice Leopard 4082 with 2000KV from Kershaw Designs or elsewhere would be nice on 4S and it would take a pretty big prop.

You could also go for 6S power on a 1100-1500KV motor but, then ESC's get more expensive etc...

I ran a Feigao 580 7l in mine, but the leopard 4082 would be a better choice. Here's a video of mine. http://www.youtube.com/watch?v=GNWiQBrcIX4, this was a very bad run. I was playing with the cg and had it too far aft. After this I changed it and it ran a lot better, I just didn't video it. Here a video of mudl (awesome builder) and his twin genesis http://www.youtube.com/watch?v=xu8jH4EdFaQ

At the beginning of the second video is a list of whats in his boat.....Google the perts and do the math, then add about $300 bucks for incidentals.

Like doby said it wil be very expensive to do twins and if  you don't have a lot of experience it can be a nightmare. Yes you can get into the 60's on a single motor. I run 53mph and it wasn't trimmed right. A even better deal then the leopards is on the castle motor sale. http://www.castlecreations.com/promo...clearance.html a 1520 or 4s or 5s should do you good. If doing a single build is gonna cost. Your gonna need to do some good work on that boat. The steering servo rod is thin and flexs under load making the boat hard to track straight, that will need changed (I used a du-bro 4-40 rod http://kintecracing.com/Linkage_O3KP.html), the esc will need chaged a swordfish 200 would work nice (http://www.offshoreelectrics.com/pro...ef-sword-200lv) you will need a cooling jacket for the motor (http://www.offshoreelectrics.com/pro...am-castle-1520) a new motor mount (http://www.vac-u-boat.com/BrushlessMotorMount.htm) and you will need to upgrade your drive system to .150 at a minuim but .187 would be better. Your also going to need to change out the strut bushing from 4mm to 3/16 to handle the new shaft and need a new motor coupler. If you don't upgrade the shaft from the 4mm 2 piece system to something tougher it will only be a matter of time until you snap 4mm system it wont handle the torque that cc or leopard motor will put out. This is just to get a single system running well, double everything else plus new drive hardware 2 motor mounts 2 esc's 2 new motors etc.

I think I'm gonna stick with the single then! Will the castle get me close to 60?

If the boat is properly tuned and with the correct prop yea you should close. Like I said I pulled 53mph on a Feigao 580 on 5s with a m445 and my CG was way off. Properly tuned you should get close. http://forums.offshoreelectrics.com/...hlight=Genesis

As your biggest concern seems to be speed....its time for a reality check...just putting a motor and batteries into a boat will not get you to 60...its all about setup and tuning...something that is learned. Its fairly apparent that you are new to this and should start with something that can teach you what you need to know about FE Boats. Otherwise you are just setting yourself up for dissapointment and a large hole in your wallet.
There are lots of good quality RTR's out there that would be better to start with.
