Returning boater needs help

Folks... I had a rc boat back in the mid 90's, but things have changed significantly since then. My new boat is built on an Aeromarine Sprint Cat hull and has a Leopard Nemesis Gold LB40WCJ-68 mm motor rated at 1600 kv. Power is fed from a Hobby Wing 180 amp speed controller, and it meets the water with a balanced/ sharpened Octura M545 prop.

My LHS is oriented towards helis and off road vehicles, they are clueless when it comes to boats. Im looking for 2s and 3s battery suggestions for this boat. I will be using 5.5 mm bullet connectors and im thinking about running at least 35c packs witb a minimum capacity of 4000-5000 mah. As i understand it, the motor can withstand 8s, but the speed controller will need an upgrade.

This will be a recreational boat, not raced. Any input regarding 2/3 s battery selection?
Also wondering if it would be better to run twin 2s / 3s in series, or twin 4s/ 6s in parallel?
What size SprintCat? That motor is really best suited for 5S or 6S, 8S is way too much. I strongly suggest a minimum of 45C and 5000 mAh cells. If you want more run time you may want to consider running 2 P.
