You first must diagnose WHAT and WHY it is dying ... know it's what your asking, but we are not there and you are.

When it dies, Is plug wet and engine flooded ?
Does engine get water in it from the cooling system of exhaust couplers causing it to die ?
Is engine idling once on water or dies upon acceleration ? If dies upon placing in water betcha water leaking in at exhaust as pump primes cooling system .... dies upon acceleration, carb setting too lean on low end

I think Scott nailed it. It sounds like if it runs fine out of the water and the minute you put it in.....water is getting pulled up thru the pumps and getting in the cylinders. So either a leak in the head but I'm guessing it might be your water cooled headers maybe.

I would double check all your connections and make sure everything tight.

There you go ... chase down your integrity of the cooling system.
Most common in damaged o-rings on header to engine mount or pipe to header coupler if a tuned pipe is being used

Bad diaphragm in the water pump? This could be drawing water up into the intake. Try bypassing it and block off the fitting on the isolator block where it connects.
Not trying to out-guess Scott but maybe just another possible cause.

Never thought of the remote pumps diaphragm offering a direct path for water into cases .... Not likely, tho the next place to look if fresh o-rings on exhaust don't cure problem.
Good call Ron

Why not pull the water pickup lines and give it a quick shot once it's on the water to see if it still dies. If it does lean if it doesn't water leak. A quick shot on the water just to confirm and shut it down.

At least you found it and know who to blame for the mistake.

Wanna talk newb mistakes? Not only did I mess up but just happened to take a pic of it not knowing at the time that I messed up.
I was trying to prime the carb and no fuel was coming up but the IV bag sure was filling with air!
Big learning day as I placed the engine where the previous owner had drilled the mounting holes at. The CG was about 3-1/2" too far forward.
