I own a Tigershark Nitro RC Boat and the instructions i have are very basic. I am looking for advice with regards to the radio system and how to set it up properly and also how to stop the boat.
Any advice would be greatly appreciated.

Your best bet would be to find a boating club to help you with your radio, either that or a hobby shop that has people that know what they're doing

if you can put a few pics up of the carb and radio it would help a bit more.
I went and look at some pics of the boat online,
not knowing if you have the same engine (original) it seems to have 3 screws for the carb.
one is your HSN,
one is the LSN,
and the small one with a little spring is the barrel stop screw, you want to adjust this one so when you close the throttle, the barrel is fully closed.
this will shut your engine, the only problem I can see is if you are using the non-practical basic 2 channel, 2 stick radio that comes with it. you will have to remember that if you bring the throttle stick all the way back it will stop the engine.

Now Dan, there's nothing wrong with a twin stick radio. I have a Futaba 9CAP that I use for everything. It's just a matter of KNOWING HOW to use a radio properly in the application it's been installed and set up to handle

Nothing against a two stick radio, specially if using a higher quality one with 4 channel or more (like your 9CAP).
I was making reference to the Basic 2 channel stick radio that comes with the boat, like in the picture below.
with a 9CAP you can program one of the switch to turn the engine off or use the throttle cut off button/switch.
the one below cannot.

My Feedback: (1)

Oh boy, an eBay boat! Did the ad say that it would do some insane speed like 65-75 MPH? It's made by the same lame company that brough us the Dolphin/Stingray that a few of us in here have read about.
OK, back to yours.
Dan gave you some good advice. My worry is that with the fuel tank sitting so high that it's going to siphon fuel into the carb even when it's not running. You might want ot find something to clamp off hte line while it's not running and possibly before firing it up. As soon as it fires pull the clamp off.
