2 & 3 blade props, what is faster?

One has only two blades and the other one has three!:D
OK, seriously. A 3-blade prop keeps at least one blade in the water at all times on a surface drive. Some prop sizes only come in only with only one or the other. What's more important is to find which prop the boat likes.

and what is faster a surface drive, sub-surface drive, or a jet drive?

Surface drive. It allows the prop to run half-way out of the water letting the engine rev higher and most of the time letting you turn a slightly larger prop in the process.
