How about a category for "finishing" (i.e. covering, painting, decals, little machine guns and stuff like that)? Or is there somewhere I'm missing that's equally apporpriate? I think kit building is a little too general for this specific skill...

There's both the kitbuilding and the Tips & Techniques forums that in my opinion pretty well cover the topics you mentioned.
