Default please help - setting up an Align 35G ESC

I bought an align 35G ESC for my T-rex... reading the instructions, I'm a bit (whole lot) confused on how to set up the thing..

do I boot up and wait for the beeps that I want then move the throttle stick to the opposite extreme to acknowledge that setting? then back up to full to go to the next setting?

guys, this is the first time I've done this type of thing, any help you can share would be greatly appreciated...

how do you get the thing to cycle between options? (i.e. setting 4-1, 4-2 or whatever)
