I've read from some "experts" that the Edge 540 design (with the straight wing) is the most stable of the big aerobats ... yet on the other hand I've read (also from some "experts") that it is the most prone to wing rock. Isn't that a bit contradictory? Which is it?

Its really isnt more or less stable. I'm not sure how to even define stability as it pertains to aerobatic airplanes.
Wing rock in high alpha is probably a little less.
The wing panforms does tend to have a soft stall, which makes the Edge a little more difficult to get a positive break for spins if flying competition. I had to develop a little different technique. Other than that, it really isnt a factor.
So much of an airplanes perofrmance depends on proper set-up. Just CG along makes a very big difference in any model.
