Default Radio setup for twin hidro

Hi All
I´m building my fourth hidro, a german design called PuddleTwin. It´s my first electrical Twin .

Mine has two brushless and I read here some notices about it´s a good idea to link rudder with motors for water taxing.
BUT, i look for a more advanced setup, why not set my radio for an engine out training...? My idea is to mix my radio (Futaba 7CAP or Futaba 10 CAP) to stop a motor in flight for training purposes with an engine out using a two or three positions switch. May be a three position works Normal - 50% one engine lost - 100% one engine lost
I wonder if somebody here did something and can give me some comments.
