the controls are very sensitive, is there a way to make it a little less sensitive when flying?

Yes there is actually and it's great for beginners.

There is a linkage on each servo.. the linkage arm on
the servo has three holes, ie: three positions for the up
and down linkage to be place.

Move the linkage on each arm towards the white gear: ie "in". The trick is getting the tiny
little brass pin back in.

You have three servos... three servo arms.
Each arm.. has the three little holes to place the "fork".. the new hole placement,
you are moving to... make that little hole a tiny bit bigger (on the arm) so the pin
slides through easily but not so much that you have wiggle. Just enough
so when you reconnect the vertical linkages with the "fork" you can get
the pin through the arm to the other side of the fork.

Makes a big difference until you get to be an experienced pilot at the controls.

Yes reducing the throw on each servo will make your heli less sensitive. Always attach a trainging kit under the heli to help you out.
