Mini Baja + Mamba 25 = What Pinion should I use?
I have everything:
Mamba system
Deans connectors
But I am not sure what gear to run on the Baja. The stock one is a press fit, so I don't know if I could re-use it, or should I go with something like a Robinson Racing Gear with a set screw.
Any help is much appreciated.

I hear you can use the stock pinion. However, you have to use a drop of CA glue to attach it to the motor shaft. This is because the shaft on the stock motor is splined, whereas the shaft on the mamba motor is smooth.
I run a 15t metal pinion with a set screw. I had a hell of a time keeping the pinion on the motor shaft. I tried grinding a flat spot on the shaft, then blue loctite on the set screw, and finally blue loctite in between the whole shaft and pinion and that finally got it to stay. I wish I would have tried using the stock pinion first. However, it seems like you might melt the stock pinion pretty quick with a powerful brushless set up.
Motor temps with my 15t pinion were 150F with a 2s lipo, and 170F with a 3s on a 5400kV mamba.

I am trying to install the Mamba motor now, is there some kind of special motor plate that will be needed to install the Mamba?

No, you don't have to modify it at all.
However, after hundreds of huge jumps and crashes due to all the power, you might bend it out of shape like mine, lol

I have the Mamba 25 for 1/18th scale & I can tell you, the holes in the motor do NOT line up with the stock holes in the Mini Baja's motor mount.
