Default Minimun torque req. for servos?

Well, over the winter I plan on building a Herr AT-6 and a couple ACE simple series. I really want to save weight and have all three be performers. I figured one of the easiest ways was to use small radio equipment. But many of the micro servos have not a lot of torque. Was wondering what the minimun torque should be so the I can still fly the plane w/plenty of authority. Thanks.

I like Hitec HS81 servos for control surfaces on models of this size and something like a Hitec HS55 on the throttle to save weight.
