Being new to model aircraft I'm never sure what to use to properly identify the various control surfaces used in them to control the planes attitude. I would like to use the names all of you use commonly when you refer to these. Such as rudder, flaps, elevator, horizontal satbilizer, verical stabilizer, elevators, tail, elevons etc. Can one of you please help me with a definition of parts and what they do so I properly identify these in future referances.

I basically know these but not what's commonly applied to these various parts by all of you. A simple list is greatly appreciated.
