3010 would be my choice out of that list. Good mix of speed and torque.
90oz is plenty strong enough for a 60-90 sized plane, even rudder.
Metal gears are preferred when you get to larger planes and gas engines. The surfaces get large and you can bust plastic gears just by knocking into the surfaces.
The disadvanges are weight and slop. You have to pay a lot more money if you want a good, tight, fast MG servo.
