I have used the S75 servos in other E-flite fiberglass EDF applications that fly around 100mph. It's a fair compromise between cost, weight, and torque.

When mounting the servos in the tail, weight is a key issue. The control surface doesn't need much throw so you can take advantage of mechanical gain on the linkage.
