You can, but its a heck of a lot harder to balance a 3-blade than it is a 2-blade prop IMO. It still needs to be done, but if another prop can be found of the right size, I'd buy it vs. cutting a prop down. That is unless you can re-contour the end of the blade so the ends arent just blunt square ends. Square edges = far less efficient.
