I try to match all of the sheets total weight for each side of the wing (equalize the weight of the sheeting on each side of the wing before glueing) and then laterally balance the airplane after it is completed and the engine and all accessories have been installed.

Just curious why you don't put more of the
heavier sheets on the wing opposite the side mounted engine, (assuming the engine is side mounted). It will reduce the amount of weight that needs to be put on the "light wing" to laterally balance. The "accessories" that I have on SPA-type planes are all centrally located, or in the case of the muffler, on the same side as the engine...meaning more need for lateral balancing.
Now if the wing is upright or inverted, I'd understand the even distribution.
