Maybe a dodgey connector between the esc and motor?

A bit of oxidisation forms on the bits that don't touch, pull the connectors apart and put them back together and by pure chance you could have had one connector with an oxide layer providing some resistance. Excercise the connectors a few times (swapping motors and esc's) and oxide layer is now worn off and gone, along with the problem.
