Default Pilot Yak conversion

I know this question is not pattern related but you guys are the experts on motor/battery/prop selection. I am planning to convert a Pilot Yak 54 to electric, the model is 88" span and I calculate the all up weight at 15Lbs.
I have an Axi 5330/18 259kv and intend to run it on 10S 20C packs, my ESC is a Jeti 99 spin and I would like to get 2400 watts out of the motor/ prop to give me around 180watts per pound which should give reasonable performance.

The question is can I get 2400 watts safely out of my setup? I would like to draw no more than 80 amps so that looks possible (80 amps x 37 volts = 2960 watts) I was thinking of a 20x10 APC to start off with, any ideas / advice would be greatly appreciated.
