First, in no way am I an expert in covering (read: Just doing my first wing as I type...)

If it is against balsa, you could probably apply squares, BUT, fuel and such may be able to seep into the edges unless there is some overlap.
Over wings you'd probably have to do a full cover and then apply over it (as there are ribs and gaps)
