I think those 3003 servos would be all you need. You can buy an update case top for about $10/servo that has a ball bearing on the output.
I think we have gone overboard on torque requirements. I have flown digital systems since 1966. For years we had nothing anywhere near as powerful as a 3003.
You would be surprised how little torque is required if you are not doing those ''cat thrown in the air'' 3D maneuvers.
With those digital servos make sure you have adequate battery power. They have a microprocessor in them that can suffer brownout.

I tend to agree. However I dont know if the nylon in the gears in servos these days is as good as it used to be. For years I ran 148 futabas in some very large planes and even in crashes never broke a gear. I have broke gears in newer servos under conditions that have really suprised me.. Ie they shouldn't have broken. 645 are a good servo. I am running these now hitec 5496mh $34 each metal gears. Will see how they hold up in the long run.
