I have used the Eagle Tree system and it worked very well for what I wanted. Granted, it was not in a jet, but I think they do have a "Pro" version for jet aircraft. Nice thing is, you can hook up the dashboard (as they call it) directly to your laptop and "real time" the telemetry and save it in a file.
