The reason that thick spring steel (piano wire) breaks is because you are trying to bend it over a sharp edge on the vice.

The solution is to round off the sharp corner with a file.

With the sharp corner gone you will be able to bend quite heavy wire with the aid of a hammer and not worry about it snapping.
