The 10J cannot do all you are asking. What you want to do is very complex, and the 10J does not have that complexity.
When you program dual aileron servos and want to have flaperons, you can put them on a switch, but that will give you full down, neutral, full up (airbrake/spoiler). You can use a knob to activate the flaps, but the knob will act the same way as a switch, except that you'll have full adjustability.
Again, you are not asking for a simple setup, but something quite complex. You could probably get that kind of programming with a 14SG, certainly with an 18MZ.
