The Eagle II is a good flying plane - I've rarely had any problems at all with mine. No control with throttle up is a bit of a concern though - I'd make sure my elevator servo isn't shorting out. Engine deflection is built into the firewall design but I also added just a bit more once I flew her a bit. Mine is down 5 degrees and right 3 - has been for quite awhile (many years) now.
One note here: the wing is rather extreme high-lift, even more than the SIG Kadets (which I've also got flying). Inverted flight requires A LOT OF DOWN ELEVATOR!!!!! This is even WITH the engine deflected down. Just for reference, I've got something like 60 degrees elevator deflection up and down with mine - as much as I could get when I built her. Rudder is also maxed-out and ailerons move about 45 degrees each way.
