You will find that any of the mid wing aerobatic airframes from the more reputable companies in the 30cc-50cc size will fly with similar characteristics.....so specifically limiting your choices to a particular style based on the way the simulator flys isn't doing you any justice. A Extra 300 is going to fly almost the same way as a Extra 260....Edge 540.....Slick 540....etc...etc.
If cost is the determining factor.....look into used airframes. While its no longer produced.....one of my favorites in this size was the Great Planes Patty Wagstaff Extra 300.....which I think your ST-3000 would probably fly in a scale fashion. They can be found for around the $200 range if you look hard enough. Mine had a DA-50 and it was one of my favorite airplanes till I dumped it in our pond at the time.
The $140 for the CMP is not a bargain....most if not all of any hardware included will probably need to be replaced. You will be lucky if the airframe is even built right.....like matching incidences....glue in all the right places......I've even heard of them putting two of the same side stab halves in the kit....so be prepared to do a bunch of rework. For an experienced modeller...this would be alot.....for a novice.....it's really alot.
Most of the responses in here are from folks who have experienced these airframes....and like you...we were trying to save a little money. We found out all too soon that there was no money to be saved.....Good luck in whatever you choose.
