If you end up with some small air pockets after that it is not that big of a deal since they would end up deeper in the finished laminate. You may be able to get a perfect mold with just wet layup, but I don't think I would want to try.

Vacuum would crush the plug. It's just going to take some time and thinking things through to get the first couple of layers down without voids. If it were easy, everyone would be doing it.
