The Y harness comes in two different modes. Same direction and opposite directions. The main reason to use two channels is so you can dial in differential. Aileron moves more down than up. Or to use ailerons as flaps.
Some prefer to have more up than down as it reduces drag, in theory anyway. You can get that result by moving the control horn further from the hinge line from what I've been told, haven't tried it yet though
