Note that the motors themselves can handle any voltage in RC land, as long as current&power drawn and rpm don't get too high.
Motor wire insulation lacquer/resin/coating can withstand several hundred volt.

Voltages and props in adds are merely suggestions.

However ...
Highest voltage must go with lowest prop load suggested, highest prop load with lowest voltage to keep current in bounds.
Highest prop load and highest voltage will smoke the motor in an instant.
All this because current is proportional to load (current = torque × Kv = torque / Kt, all in SI units).
