Apart from the usual racks & shelves I use bicycle storage hangers. Attached to the ceiling of the garage you just winch them up out of the way Most tradesmen have graduated to fibreglass ladders so there's lots of old wooden extension ladders laying around. I have one of these suspended from the ceiling at one end with the other end swinging down to load it then lifted up out of the way.

One thing to think about with these methods is oil/fuel dripping on your car from the models,

A friend who lived in a townhouse with just a single garage, but lots of height, built a work
platform at one end of the garage which overlapped the bonnet of his car which was his workshop for many years.
