The method "fotta" describes should work. That is the way I had my UStik setup on my Hitec Eclipse. So for crow you would need to hit two switches. You would need to hit the gear switch to drop the flaps (mix in about 3-8% down elevator if possible) and then hit the switch or knob to move your flaperons up.

Also you can just flip one flap servo 180 degrees or use one futaba and one hitec servo as they rotate opposite. Since they are only flaps exact matching of throws and speed is not crucial. They need to close but not perfect.
