Yes, you can use a Hitec RX, just make sure it's designed to work with your JR TX. Airtronics and JR use a modulation scheme called positive shift, Futaba and Hitec use negative shift. They're not interchangeable. Some of the Hitec RX's are shift switchable, some are made for a specific TX. Just make sure you get the right one.

Servos are servos. As stated by Charlie. just trim off the tab on the Futaba servo to allow it to fit into the Hitec RX. Except for very old Airtronics servos, the wiring on all servos is the same, positive in the middle, signal and negative on the outside. If you plug them in backwards it won't hurt anything. It just won't work.

As far as type of servos it's not really critical as long as they are standard servos (40 oz + torque). It's a good idea to use the same type servo on the cyclic control. If you have a CCPM heli make sure you use 3 identical servos on the swashplate.
