Default 3D elevator throw

I have never tried any 3D but this question has stumped me for awhile. If a plane snaps with too much elevator throw how can a plane tolerate 45 degree elevator throw without snapping. Is it because when you are doing 3D the plane is actually no longer flying on its wing and its flying on the prop ??? Also how do transition into a 3D maneuver from normal flight without snapping, stall the plane first ??
