I actually do both: I pinch the right stick, and thumb the left. Pinching can be more accurate, and waaaay back when I learned, it was the only acceptable way, but now that school of thought has changed (for most anyway). I teach students to pinch, but if they're more comfortable with thumbs, I'm not going to insist on it.
