Dave, 3 to 4 degrees is about right. With Ernst plates, I don't have to worry about the washer thickness or sinking into the wood, as the plates come in exact angles (you could also stack the plates to get up/down thrust and left/right thrust) and spreads the stress on the firewall over a large area.
