Bipes take longer to set-up. Thrust angles are more critical. You need quite a bit of rudder to aileron and elevator mixing. It takes a while to get it right.
Once set-up properly, they are competitive with the extras in the pattern. The weakest trait is that the increased weight/drag hurts on up line snaps. You have to really manage your energy and plan ahead. The two biggest strengths of the Ultimate are the rudder authority and very axial (and fast) aileron rolls.
If you want a challenge and a crowd pleaser, go with the Ultimate. If you are very competitive, go with the extra......they are easier to set-up.
