If you run a search on this plane you will find lots of information here at RCU, and most likely any question you may have will be answered. Your info on the servos is correct, I would not recommend anything less than 60oz for the ailerons and elevators and 100oz for the rudder and while opinions on servos will vary I don't think anyone will recommend 3003-3004.
