It does sound like you might want to look around a bit more. It really is a matter of finding an instructor that has a schedule that matches yours.

Btw, just because a guy is too busy one day doesn't mean he will be too busy every day. Did you ask the guy who wants to go fast if you could slow the plane down a bit? It's possible he just isn't thinking about it. If you are used to flying bigger, faster planes, it's easy to forget just how slow a trainer can cruise around the sky.
