Like Jimbo said, there aren't many plans, as you'd normally think of plans for most combat planes.
If you want a SPAD design, look around at
www.SpadToTheBone.com. There is a spad forum here on RCU, and a spad specific forum site out there, but I forget the URL. There are some pretty cool new SPAD designs out there, if you look around, you should be able to find plans.
However, as Jimbo said, most combat planes use a foam wing. For open type planes, the fuses vary all over the place, lots of differnet things in use. But most of these don't have anything I'd call plans really.
To work with foam, you can either make your own foam cutting setup like I did (it's easy), or you can order cut wings from one of the many guys with a CNC cutter. For wing specs, you just need root and tip chords and airfoils and sweep info. If you know of a plane you like, ask the builder, they will almost certainly share their specs with you.
Wing building and covering techniques vary a lot. Your best bet is to start with a kit and see what you like or don't like about it. Look around on the forums, espeically at
www.RCCombat.com, there is a TON of wing construction info on there. If you see something you like, ask about it, just about everyone likes to share.
