Kevin,
I just watched the video. Gary's E3D rocks a bit during the harrier, and a harrier is easier than an elevator. I fly a plane at the moment, the Extase with a YS91AC. I have about 25-30 degrees spoilerons in during elevators, and it rocks quite a bit, but when doing harriers it is very stable. What I'm saying is, just because a plane does decent harriers, doesn't mean it does decent elevators. They appear to be similar maneuvers, only with the plane moving at different angles to the ground, but the planes will act different.
Don't find 3D scary, but fun and rewarding. Keep it low and slow for maximum fun.
