Well, here is a ROUGH estimate, this will vary greatly depending on gearing, tires, weight, etc(keep in mind these are in MPH)

Monster truck-low 30s-mid 30s

stadium truck/buggy-high 30s to low 40s

touring/on road-low 40s to mid 40s

As far as the winds go, single or double should be fine, I can raely even feel any difference betweeen the two.
