Where is your C.G. ? It might be set too far back or your throws are too large. I indeed had to program a mix to fly knife-edge. Never had the problem of snapping when applying full elevator though (at least on the UCD... I had this snapping occurring on my Giles due to the CG being a little too far back... varies plane to plane).
