Never had the problem of snapping when applying full elevator though (at least on the UCD... I had this snapping occurring on my Giles due to the CG being a little too far back... varies plane to plane).
My CG is 6.25 inches behind the wing leading edge. I must admit I had extreme throws on both the elevators and the rudder. I used the the outer most holes on 1.5 inch servo horns. I'm sure I had too much throw and have since taken some out. The plane has calmed down somewhat but still tucks pretty good when I try to do tight knife edge loops.
