RE: Walt Moucha PJ 295
Cowl and wheel pants can be obtained from Fiberglass Masters. The canopy from a Byron's S-2 Pitts (try Iron Bay Models) can be trimmed down to fit. As for control throws: all the rudder you can get, start with 1" up and down (measured at the widest point) for the elevators, and start with 3/4" up and down on the ailerons. You may want to change these throws after the maiden flight to suit your flying style.
I don't remember who cut the original Walt Moucha kits. You might inquire at American Kit Cutters.
I built my WM kit around 1993, but it didn't last me too long. Bare frame (stuffed) was 16 pounds with a 4 cubic inch gasser, but that wieght doubled with cloth and paint finish, and landing speed was on the fast side.
Side note: When I built mine, Walt's direction booklet included 3-views of the full scale planes. They showed a 2 degree offset in the vertical fin, where his plans showed 0-0-0-0 for all incidences. With the firewall at 0 degrees (right and down thrust), I offset the fin 1/8" left at the leading edge, which resulted in only a click or two right rudder trim after the maiden flight. With the semi-symmetrical airfoil, I added between 1 and 1 1/2 degrees of positive in the stab, and -1 degree decolage in the upper wing. It flew very well with that setup. Suggest you cover with plastic film to keep the overall weight to a minimum.
Good luck with your project,
Rich
