It would take twice as many packs to make a 5S2P. Stephen used a 3S1P and a 2S1P pack wired in series to obtain a 5S1P pack. By adding another 2S and 3S in series then wiring both of the resulting 5S1P packs in parallel you would then have a 5S2P pack.
