That hull is a fine place to start.
What puzzles me (I'm from Europe) is the fact that the hull has a flex shaft and still comes with a geared setup (generally seen as power soakers), what even puzzles me more is, that in the pics it seems to be 1:1! why not go direct drive and eliminate the (noisy?) gears.
Overhere we run these set-ups direct drive, with a flex shaft.

European hulls, I know, but these I know and can recommend (in direct drive...).
As you have 7 cell packs, you could start with a 14 cells set-up with a relative cheap 700 motor, a flexdrive, rudder, carbon prop, to start with and have the option to upgrade to a somewhat more costly brushless set-up.
