I use the same techniques used on many scale prop-planes as well. All wooden parts are covered with thin fiberglass cloth and epoxy, then fillered and sanded (repeat over and over until no more holes or roughnesses appear). All surfaces are then lightly wet-sanded with a 320 or 400 grit sandpaper until smooth, mainly to be sure all release agent is removed, and small scratches won't be seen later on.
I then paint my planes using 2 component automotive paints from Spiess&Hecker, they are leading worldwide and have about the most super gloss finish you can imagine (depending on plane, a shiny fighter will look as crappy as a dull blue angel), and resist about any abuse. They are also very easy to work with and clean up.
Decals are then applied (ususally homemade), weathering is done and other details added, and then the entire thing is painted with a coat of clear (shiny or dull, depending on).
